“Pounti”

Serve hot, as a starter, accompanied by tomato purée, salad or quite simply on its own.

The traditional “Pounti” recipe

Le PountiIngredients :

  • Pancake batter with 5 eggs, 250g of flour and milk
  • Bacon
  • A slice of ham
  • A butter terrine
  • Prunes
  • An onion
  • Parsley
  • Beet or chard or spinach

Preparation :

  • Preheat the oven to 200°.
  • Make the pancake batter slightly thick.
  • Add a finely chopped mixture of :
    • - A slice of bacon (fatty or smoked according to taste)
    • - Yhe slice of ham (and possibly remainders of meat
    • - A handful of parsley
    • - A good quantity of beet leaves (or chard or spinach)
    • - An onion
  • Salt & pepper.
  • Coat the butter terrine, possibly covering with bard or fine slices of bacon.
  • Pour half of the mixture into the terrine.
  • Put on a bed of prunes left to swell overnight; then add the second half of the mixture.
  • Put in the oven for a good hour; let the preparation darken.
